ingredients
- 1⁄2 lb mild yellow cheddar cheese
- 1⁄2 lb sharp white cheddar cheese
- 4 1⁄2 ounces pimientos, with juice
- 1 cup chopped scallion
- 1⁄2 cup mayonnaise
- 2 teaspoons fresh lemon juice
- 1 teaspoon minced garlic
- 1 tablespoon Worcestershire sauce
- 6 dashes Tabasco sauce
- 1⁄2 teaspoon fresh ground black pepper
directions
- Grate cheese and place in large bowl. Add pimentos and juice and the scallions.
- Combine mayo, lemon juice and garlic. Add to cheese mixture. Add worcestershire, Tabasco and pepper and mix well. Taste and adjust seasonings.
- Serve at room temp with crackers or veggie dippers. Will keep several days in fridge.
