- 1 1⁄2 cups rice
- 2 tablespoons vegetable oil
- 3 tomatoes, chopped
- 1 onion, chopped
- 1 jalapeno chile, chopped
- 2 teaspoons cumin seeds
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon pepper
- fresh cilantro
- minced bell pepper
- carrot
- 3 cups boiling water
directions
- Saute the rice in oil until golden brown. Stir in tomatoes, onion, jalapeno, cumin, garlic, pepper, cilantro, bell pepper, carrots. Add water, reduce and simmer.
- Cook covered for 15 minutes or until liquid is adsorbed and the rice is tender. Remove from heat. Let stand before serving.
