  • Press the excess moisture from the spinach. Combine the cream cheese, parmesan cheese, mayonnaise, onion, garlic, basil and cayenne pepper in a mixing bowl and beat until blended. Beat in (if your mixer has the capacity) or still in the spinach and Monterey jack/Colby cheese. Spoon into a 2-quart baking dish.
  • Bake at 375 degrees for 45 minutes or until brown and bubbly. Press the top lightly with a paper towel to remove excess oil. Serve warm with tostada chips and/or toasted bread rounds. You may freeze for future user before baking.
  • Serve as an entrée by spreading the spinach filling on corn tortillas. Roll to enclose the filling Arrange seam side down in a baking dish and sprinkle with shredded cheese. Bake until heated through.
