Just Peachy French Toast

"This recipe is adapted from Lean and Luscious and Meatless. You can make these delicious French toast sandwiches with any flavor jam, but peach is my favorite!"

  • In a small bowl, combine egg white, milk, and vanilla.
  • Mix well with a fork or wire whisk.
  • Pour into a shallow pan.
  • Make 2 sandwiches from the bread and jam, putting 2 tsp of jam inside each sandwich.
  • Dip sandwiches in milk mixture, coating both sides.
  • Melt 1 tsp of the margarine in a preheated nonstick skillet or griddle over medium heat.
  • Place sandwiches in skillet and brown lightly.
  • Turn, add remaining margarine, and brown the other sides.
  • Serve hot.

  1. Wonderful! I used my own french toast mixture, which has more eggs than milk & mixed in a little cinnamon & a Splenda pkt with it. Used sugar free preserves as well. Great way to spruce up french toast!
     
  2. I did use Egg Beaters instead of an egg white, but otherwise followed this delicious recipe. Loved the warm jam in the middle and liked that I didn't need to use syrup.
     
  3. This was a nice switch from my usual WW French toast. I used a fabulous plum jam a friend canned and sent me in place of the peach jam. Also used reduced calorie bread. The toast was a little crispy and toasty with a lush ooze of warmed jam coming from the center. Quick, healthy and delicious.
     
  4. Nice lowfat French toast. I used strawberry jelly (I've been on a strawberry kick lately) and low fat wheat bread. I left out the butter (I tried 1 piece with butter spray and didn't notice a difference) and used my nonstick griddle. Fast and easy for a weekday breakfast. Thanks Whisper!

I live near Rochester NY with my husband and our 18-year-old cat, Fluffy. It's actually Fluffy's house, but he allows us to live here as long as we pamper him and feed him generously. Our daughter, Kree, whom some of you know from Zaar, is also living with us again while she begins a new business venture in real estate. She's the one who got me hooked on Zaar and taught me to try new recipes rather than stay in the cooking rut I was in. In my free time I like to take long rides or sit by the water, both of which I find very relaxing. I also like to do counted cross-stitch and read. I dabble in photography, always looking for that elusive 'perfect' shot. I did more cooking before I started working full-time, and plan to again when I retire (still years away, but dreaming).
