Kalamari With Anchovy and Olive Sauce

  • For sauce: In a skillet, melt the butter over moderate heat, add garlic, cilantro, shallots, mustard, anchovies, olives and ouzo and season to taste.
  • Cook over low heat, stirring occasionally, for 10 minutes.
  • For squid: Cut squid into ¼ inch rings and toss with the flour.
  • In a large skillet, heat 2 tblsps of the oil over high heat until hot and cook squid, stirring, for 1-2 minutes, or until white.
  • Stir cooked squid into the prepared sauce and cook 2 minutes.
  • Transfer to a heated serving dish and garnish with lemon wedges.
  • Great served with a pilaf.

  1. Lots of flavors going on in here! Anchovies, ouzo, Dijon, Kalamata olives, garlic and so on... and it all works! I did not have cilantro but thought basil might go just as well with all these flavors and so it did. Really quite fantastic! The anchovies are prominent flavor here, just in case someone doesn't care for them as we do.
     
  2. I tried this recipe in its unedited form and had some trouble. Am looking forward to a new recipe.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
