  • 1. Mince garlic.
  • 2. Chop onion and kale.
  • 3. Saute onion and kale with garlic in oil.
  • 4. Put all ingredients in a large pot.
  • 5. Simmer for about an hour.

  1. Made for PAC Spring 2014. This was a nice tasting soup, especially given the simple ingredients and easy preparation. I used a bean mix that contains cannellini beans, but other than that followed the recipe as posted. Very hearty, the edamame adds a buttery flavour to the broth that was really nice. To take it over the top, grate on a bit of real parmesan cheese and add just a sprinkle of fresh pepper.
