Kale Turkey Oven Patties With Veggies

"Dh and I surprised ourselves-- we like kale! I freeze it in quart zip locks which is about 4 ounces worth. This is meant for the two of us, but we each only eat one patty and the other two we use for sandwiches for two days. So if you were going to serve 4, double the oven vegetable aspect. Have used different jams with this and enjoy so use what you have. Hope you enjoy kale as much as we do."

  • Nuke kale and minced onion, covered, for two minutes,stir, and cool--in fridge.
  • Preheat oven to 375 degrees.
  • Foil line two cookie sheets.
  • Mix together veggie mixture and put on one cookie sheet. Roast for total of 70 minutes, (stir twice -- after 25 minutes, again after 45 minutes so that it doesn't stick.).
  • Put oven patties ingredients in medium bowl and mix, put bread halves onto foil, divide meat mixture into 4, and put one potion onto each bread half. Bread will soak up grease and prevent the meat from sticking to foil.
  • Roast oven patties for 60 minutes total, combine glaze ingredients, spoon onto patties the last 15 minutes--making sure to cover the kale or it will crisp up.
  • Before serving discard bread halves.
