Karen's Macaroni and Cheese Casserole

It really has that good homemade taste and can be used as a meal or a side dish. ***Please make sure you add or subtract anything you do not like in this reciepe. I use handfuls of shredded cheddar cheese rather than exact measurements because some people prefer to add more or less cheese.***"

  • Preheat the oven to 400 degrees.
  • Add macaroni to 5 qts of boiling water. Boil for 6 minutes.
  • Using a spoon, lightly crush croutons. Some chunks are desired.
  • Add the brocoli and mixed vegetables to the macaroni and water. Keep boiling for an additional 2 minutes. (Do not leave the noodles in the water for more than 8 minutes total) Drain.
  • Put the macaroni/vegtable mixture in a 13 x 9 inch backing dish.
  • Mix in the butter, milk and all the cheeses (reserve 1big handful of shredded cheddar cheese).
  • Add your desired amount of black pepper and mix well.
  • Sprinkle crushed croutons on top of casserole.
  • Bake for 20 to 25 minutes, or until cheese is melted (you should hear the bubbling from the velveeta).
