Karen's Spinach Dip

"This is the best spinach dip I have had and it always gets recipe requests. It is so good. When I have company, my daughter requests this and my pizza swirls then secretly invites her friends over LOL. I have learned to triple this recipe."

  • Mix together all ingredients and chill 5 hours or overnight to allow everything to absorb. (Trust me it is needed to soften the veggies that are in the knorr. I usually chill overnight).
  • Serve in a French bread round with the top cut off and the pulp scooped. Cut up a French baguette into small pieces for dipping.
  • Pig out!

Made today for tomorrow's after church meeting's get together Made at 10 a.m. it is now 1:30 and I had to try a bite..then another and then still another.. well I might just need to hurry to the grocery & get more fixings if I don't stop sneaking just a little taste.. very excelent!!! UPDATE: just recieved a phone call from my 10 year old great neice (who turns 11 today) she asked if I would make this for her family birthday party this Sunday..of course I'm going to make it for her..I think a almost11 wanting this is a HUGE complement to the recipe...oh and she is coming over to visit Saturday to help make it..think I'll take her through ALL steps including shopping for the ingredients..this dip is really really good
     
  2. Yummy! This is a nice change from the usual baked spinach & artichoke dip that I usually make. It is simple to put together and tastes great. I didn't have enough sour cream, so I substituted some cream cheese, and it turned out great. Thanks for the recipe.
     
  3. Wonderful! This is one of those recipes that everyone just stands around and devours until there is not a speck left! I like this version better than the others as I am not a big fan of water chestnuts. I put the dip inside of a bread bowl (Country White Bread Recipe #141600). Thanks Karen - This was awesome!
     
  4. I've been making this for a long time and it's truly the star in the world of Spinach Dips! The secret being of course, the Knorr Vegetable Soup Mix. I've even sometimes mixed it only with sour cream & mayo for a quick dip when guests arrive. It's that good. But why do that when you can add spinach and green onions for this OUTSTANDING dip that even spinach haters will love. It's outrageously good in a hollowed out loaf of pumpernickel bread surrounded by the cubed leftover bread for dipping with plenty of fresh veggies available like any colored peppers, broccoli, cauliflower, snow peas, mushrooms... the list goes on & on! Thank you for posting so everyone can try this for summer get-togethers! Definitely double or triple this for bigger bashes. It's without a doubt the most popular guest at the party!
     
  5. I use this recipe ALL the time, and trust me, you should at least double it. It disappears quickly. One thing I noticed when shopping for the Knorr Vegetable Soup Mix though, is that there is more than one type of vegetable mix, be sure to get the one that ONLY says vegetable if you want this identical dip. You'll never want to lose this recipe it is fantastic with bread, vegies, or used as a pizza sauce with grilled chicken.

My name is Karen. I love to cook. I collect cookbooks, my favorite being ones you can get from churches or schools that have peoples personal favorites in them. Whenever I visit out of state I try to find 1-2 of these kinds of cookbooks. My hobbies are painting, cross stitch, scrapbooking and spending time with my 3 children. Megan 21 years old, Jeremy 16 Years old, and Clayton 8 years old. People love my pizza Swirls. I love all foods. I love to try complicated recipes for fun and I make alot of my own breads. My kids love to help me cook I think its a great time to get to communicate with our kids especially when life can get so crazy with school and such, this is a great habit we have gotten into, cooking and chatting LOL. We now have a smoothie night where we make an assortment of smoothies as a dessert, and on occasion we have had smoothies for dinner but that is a rare occasion. Its kids choice and they have fun on recipezaar because I have dedicated a cookbook just to smoothies. My daughter is getting creative in her smoothie endeavors and coming up with some incredible ideas! In Jan 09 I was diagnosed with Breast Cancer and have just began the treatments to get myself back up to speed. *UPDATE* November 2009 I have finished my radiation and chemotherapy and am on the mend.
