ingredients
- 2 lbs fresh carrots
- 1 cup fresh squeezed orange juice
- 2 ounces vegetable oil
- 3 ounces white vinegar
- 1 bunch fresh dill
- 3 tablespoons honey
- salt, and
- white pepper
directions
- Peel, then shred the carrots with a grater.
- Chop the fresh dill into tiny pieces.
- Mix all ingredients together and let marinate for 1/2 hour at room temperature to let the flavors blend.

This is a nice alternative to the mayonnaise-laden carrot salads I’m accustomed to finding. DH, who doesn’t like carrot salads, even said he would eat this one at a potluck. I let it sit about 36 hours before serving which allowed the flavors to blend more. Thanks for sharing! Reviewed for ZWT6.
