“Moist, sweet, delicious cookies that are vegan. Packed with oats & dairy & egg free, these are great for nursing moms or anyone wanting something sweet but healthy. Adaptable recipe-I usually sub applesauce for half of the oil, add raisins, chocolate chips, &/or walnuts. Cookies freeze well both baked and uncooked.”

Directions

  1. Preheat oven to 350 F.
  2. In a large mixing bowl, cream together the oil, sugar, water, vanilla, banana & applesauce if using.
  3. In a separate bowl, combine flours, salt & soda.
  4. Add the dry ingredients to the creamed mixture and blend well.
  5. Add in raisins, nuts, &/or chocolate chips if using.
  6. Drop by teaspoonfuls onto greased cookie sheets, & bake for 12-15 minutes.
