  1. Preheat oven to 325 degrees. Lightly grease two 8 1/2 x 4 1/2 loaf pans.
  2. Combine flour, salt, baking powder, baking soda, and spices in a bowl. Set aside.
  3. In a large bowl, beat butter and sugar at medium speed until just blended.
  4. Add eggs one at a time, until light and fluffy.
  5. At low speed, beat in flour mixture until combined.
  6. Beat in pumpkin. Add oats and applesauce.
  7. Divide batter evenly into prepared pans and bake for about 1 hour, or until a knife inserted into center comes out clean.
  8. Let loaves cool in pans for 20 minutes, then turn out on a wire rack.
  9. Eat them or freeze them for later. Yum!
