SPICY TOMATO and VEGETABLE SAUCE
- 1 cup sweet onion, chopped
- 4 garlic cloves, minced
- 1⁄2 cup green pepper, sweet, chopped
- 1⁄2 cup red pepper, sweet, chopped
- 1⁄2 cup celery, diced
- 1⁄2 cup carrot, diced
- 1⁄2 cup mushroom, diced
- 1⁄2 cup zucchini, diced
- 1⁄4 cup extra virgin olive oil
- 1⁄4 teaspoon lemon salt
- 1⁄4 teaspoon celery salt
- 1 teaspoon oregano
- 1 1⁄2 teaspoons parsley
- 1 teaspoon basil
- 6 cloves, whole
- 1⁄2 teaspoon caraway seed, whole
- 1 large bay leaf
- 1 teaspoon chili pepper flakes
- 1⁄2 teaspoon coarse sea salt
- 2 tablespoons white sugar
- 2 (56 ounce) cans tomatoes (diced or stewed)
- 1 (28 ounce) can tomato sauce (Hunts thick and spicy)
- 3 ounces tomato paste
- 1⁄2 cup chicken stock
- 1⁄2 cup v 8 vegetable juice, original
- 1 cup dry red wine
- 1⁄4 cup grated romano cheese
- 1⁄4 cup grated asiago cheese

MEATBALLS
- 1⁄2 lb ground veal
- 1⁄2 lb ground beef
- 1⁄2 lb ground pork
- 1 large shallot, chopped
- 2 garlic cloves, minced
- 1 large egg, slightly beaten
- 2 slices rustic bread
- 1⁄2 cup parmesan cheese, freshly grated
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper, fresh ground
- 1 teaspoon oregano
- 1 1⁄2 teaspoons parsley

- 2 Italian sausages, extra hot, cut 1 inch chunks
- 2 Italian sausages, sweet fennel cut 1 inch chunks
- 1 pepperoni, cut 1 inch chunks (do not omit)
directions
- SPICY TOMATOE & VEGETABLE SAUCE.
- In a large pot, cook the onion and garlic, red and green peppers, celery, carrotes, mushrooms and zucchini in olive oil over medium heat.
- Next add the lemon salt, celery salt, oregano, parsley, basil, cloves, caraway seeds, bay leaf, chili pepper flakes and coarse sea salt. (Cook 5 minutes, until starting to carmelize).
- Now add the white sugar, diced tomatoes, tomatoe sauce, tomatoe paste, chicken stock, V8 juice, red wine and cheeses and simmer over low heat for 30 minutes.
- MEATBALLS.
- Combine the beef, pork, veal, shallot, garlic, egg, prepared bread, parmesan cheese, salt, pepper, oregano and parsley in large bowl and gently mix by hand.
- Roll into balls,(your favourite size) and drop raw into the simmering sauce.
- To the sauce add the raw sausages and pepperoni and cook gently on low for 3 hours.
- Serve over hot buttered noodles with Calabrese bread and a simple salad.

Okay, this does have LOTS of ingredients, but I assembled them all before - put some music on, made a pot of coffe and I was VERY happy chopping, mincing, frying and mixing all morning! I made the FULL amount, as I plan to freeze the rest! We had this MEGA MEATBALL BLOWOUT for lunch - with a glass of wine. It was JUST amazing - do TRY to add all the spices and seasonings - the flavour was complex and exciting......we loved it! I made NO subs, I had all the fresh vegetables and spices to hand, and the meat and sausages in the freezer; I planned this the night before, and it all worked well. We ate this with giant penne pasta and extra cheese on the top. You certainly get your "Five a Day" in this meal - we needed NO bread either, or even a salad - the meatballs and sauce was just fine on its own with the pasta. This is one huge pot of goodness...all those wonderful veggies, dynamic spices, then the tender meatbals and sausages. This recipe is a 5* winner! Since I made this recipe to freeze and then take with us when our family, including sweet grandkids, takes a week's vacation at a house in Seaside, Oregon, I just added a pinch of red pepper flakes and used all sweet sausage. My spice rack does not have lemon salt or celery salt, or V8 juice, otherwise I adhered to the list of recipe ingredients. After simmering for 3 hours, the flavors of the vegetables and tomatoes and meat blended into one savory pasta sauce. Wait until my kids taste this!
