Katrina's Broccoli Casserole

"This is a recipe that my neighbor, Katrina, shared with me. It's one that is passed around at her workplace and taken to all of their potlucks. I thought it was wonderful and nagged at her for the recipe for the past 2 months....I hope you like it too!"

ingredients

  • 2 (8 ounce) packages frozen chopped broccoli
  • 1 (10 3/4 ounce) can Campbell's Cream of Mushroom Soup
  • 5 12 ounces milk (1/2 soup can full)
  • 14 lb Ritz cracker, crushed (1 sleeve)
  • 2 cups shredded cheddar cheese
  • 10 teaspoons pats butter
  • salt & pepper

directions

  • Cook frozen broccoli according to package directions (slightly undercooked) and drain.
  • Grease a 2 quart casserole dish, and preheat the oven to 350 degrees.
  • Mix the soup and the milk in a bowl.
  • Layer the casserole dish in this order:

  • BOTTOM LAYER:

  • 1/2 broccoli.
  • 1/2 soup mixture.
  • 5 teaspoons pats of butter on top.
  • salt & pepper to taste.
  • 1/2 cheddar cheese.
  • 1/2 crushed Ritz crackers.
  • TOP LAYER:

  • 1/2 broccoli.
  • 1/2 soup mixture.
  • 1/2 cheddar cheese.
  • salt & pepper to taste.
  • 1/2 crushed Ritz crackers.
  • 5 teaspoons pats of butter on top.
  • Bake uncovered at 350 degrees for 30 minutes.

  1. This is an excellent casserole that I will definitely make again. I made it to take to a friends house for a celebration supper, and everyone loved it, I've been asked to bring it again! I put it together, intending to bake it off there, although due to oven problems, I had to pop it in the microwave instead. I used fresh broccoli, and used a small cauliflower as well, the sauce was so good that every last scrap disappeared. An excellent and quick recipe that I know will be on the table again shortly. This was made in honour and fond remembrance of Stacy, taken from us too soon. October 2008.
     
  2. This is the recipe I have always used and I have taken it to many Potlucks. I took it to a work Potluck last year during the Hoolidays and it completely dissappeared! :) Thanks for sharing!
     
  3. Mark and I had this tonight and it was very good. I used it as a side dish with a beef recipe and rice. I didn't have any Ritz, so I used ranch-flavored snack crackers. It was very tasty. Thank you for the wonderful meal.

I came to this site looking for recipes that were tried and true. I stayed at this site because I found people who were kind, loving, caring and shared the same interest that I do --- food and cooking. I've saved a lifetime of recipes and learned so much about cooking and ingredients that I actually feel proud of my cooking. I bet my Mom looks down on me with pride every time I cook a new recipe from RecipeZaar, and I bet my Dad cracks up every time he sees me photographing what I've cooked! My daughters have actually gotten into the act, too, and are quite versed in searching for recipes and answers here on Zaar. Makes me proud to be their Mom. RecipeZaar isn't just a "website." It's a lifestyle. And some of the friends I've made here are LIFELONG friends to me --- and in my estimation, those types of people are a rare thing to find in this world. :) P.S.
