directions

  • saute garlic on low heat until fragrant to infuse oil with flavor.
  • add onions and heat through until slightly translucent
  • raise heat to high; add capers, and tomato sauce.
  • reduce heat - add wine and lemon juice - season to taste.
  • simmer until sauce thickens to coat back of spoon.

my grandfather sold cookware for a living and put on dinner shows that displayed/showed how a four burner stove and oven can cook an entire meal for a small party... in the old days the meal location would invite friends, family, and neighbors... i started helping him at the age of five around 1981-1982 my father is diabetic and had to invent many dishes on his own that were healthy enough for him to eat b/c of his blood sugar levels... thus i was raised on a no candy very healthy diet and have a taste for less sugary soda-pop(Diet Dr. Pepper is my favorite) to mix with my brandy(Paul Masson) or rum(Sailor Jerry). i have a tendency to lean towards cooking healthy yet flavorful(i.e. spicy) foods. the only formal training i can claim is a short stint in the U.S.Army(Food Service Specialist Quartermasters School Fort Lee, VA) during the Clinton era (when the military was being downsized and cooking was seen merely as a means to end hunger), otherwise all my training has come on the job at various country clubs, hotels, and catering staff i am: -da kine haole -a father -lactose intolerant -not a chef (unless i've been drinking)
