- 2 cups granulated sugar
- 1 cup softened butter
- 6 ripe bananas (approx 3 cups)
- 4 eggs, well beaten
- 2 1⁄2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
directions
- Preheat oven to 350.
- Cream together sugar and butter until light and fluffy. Add bananas and eggs and beat until well mixed.
- Sift together dry ingredients, then blend with the banana mixture, but do not overmix.
- Pour into 2 lightly-greased loaf pans. Bake for 45 minutes to one hour, until firm in the centers and the edges start to separate from pans.
- Cool on rack for 10 minutes before removing from pans.
- Freezes very well.
