  1. In a saucepan, put rice, thin coconut milk, and a pinch of salt. Heat to boiling. Reduce heat and simmer until rice is done. Add more thin coconut milk if rice cooks dry before it is done. This should take around 20 minutes.
  2. Add the thick coconut milk right before serving.
  3. This goes great with chicken or beef and vegetables.
