Kerrieschotel (meat and rice dish flavored with curry)

"This is a family favorite Dutch recipe. Mom made this when we were growing up. The common curry powder found in the grocery is fine for this recipe. If you are looking for the authentic taste, or are a spice connoiseur, you would look for Indonesian curry powder or Sate seasoning. I find it on-line."

ingredients

  • 2 onions, chopped
  • 2 12 tablespoons butter (or broth for lower fat)
  • 1 12 teaspoons curry powder
  • 3 cups chicken broth
  • aroma seasoning (like Maggi or Kitchen Bouquet)
  • 1 12 cups of chopped left over cooked chicken
  • 1 12 cups raw long grain rice, cooked with
  • 2 12 cups chicken broth
  • corn flake crumbs, mixed with
  • 1 tablespoon melted butter, for topping (or use broth for lower fat)

directions

  • Saute onion in butter with curry powder until tender.
  • Add broth and aroma seasoning.
  • Stir in left over chicken meat and simmer until meat is hot.
  • Meanwhile cook rice.
  • Place meat mixture and rice in casserole dish.
  • Stir to combine and top with crumb mixture.
  • Bake approximately 20 minutes at 325 until brown and bubbly.

  1. This is my new favorite dish to bring to a pot luck! The flavor this "casserole" packs is amazing! It is very easy to put together and the house smells SO good while it's cooking. I did add some garlic to the onion sauteeing stage but other than that followed the recipe to a "T" and was rewarded with a fantastic dinner. Try this, you will not be sorry you did!
     
  2. The changes I made were to add one clove minced garlic to onions. I used olive oil instead of butter, and I substituted one-half cup white wine for broth. I used 3 tsp very mild curry powder. It was delicious! Thanks for a very easy recipe.
     
  3. WOW PanNan, This was my friend Julie and my favorite casserole that we served that night. We tripled the recipe, and i could have eaten it all. Julie had the Indonesian curry powder with was a bonus and oh my. I will be making this again and so will she.   5. This is a nice simple recipe to make for a week night dinner. I tried it out a couple of evenings ago and have been taking it for lunch the last few days. It reheats well too. My kitchen still has a hint of curry to it.
