  1. Preheat oven to 350°F Line a 9x9-inch baking dish with parchment paper, overlapping 2 sides for easy removal.
  2. Combine coconut, sweetened condensed milk and vanilla in medium bowl. Mix well. Press 2 cups mixture into prepared pan. Reserve remaining 1 cup mixture.
  3. Bake in preheated oven 15 minutes, until edges are lightly golden.
  4. While the crust bakes, whisk remaining sweetened condensed milk, lime juice and eggs in medium bowl. Pour over hot crust. Sprinkle reserved crust mixture over filling. Return to oven for 18-20 minutes. Cool and cut into squares.
