  • 250 g digestive biscuits
  • 100 g butter, melted
  • 5 limes
  • 400 g condensed milk
  • 300 ml heavy cream
  • 20 g bitter chocolate

  • Whiz the digestive biscuits in a food processor until breadcrumbs.
  • Mix in the melted butter.
  • Press the mixture into the base of a greased 20cm loose-bottomed pan.
  • Place in the refrigerator for 30 minutes to firm up.
  • Meanwhile, zest and juice the limes into a bowl.
  • Add the condensed milk and cream and whisk until creamy.
  • Pour over the chilled base.
  • Place back in the refrigerator for at least an hour.
  • Decorate with shavings of bitter chocolate before serving.
