Kicked up and Lightened Waldorf Salad for Two!

Salad
- 1 small apple, diced (peel or not to peel, your choice)
- 1 teaspoon fresh lemon juice
- 4 tablespoons celery, diced
- 4 tablespoons small red onions, diced
- 4 tablespoons raisins
- 4 tablespoons shredded carrots
- 1 cup chopped cooked chicken breast

Dressing
- 1⁄4 cup plain fat-free yogurt
- 2 tablespoons low-fat mayonnaise
- 1⁄4 teaspoon nutmeg
- 1 teaspoon fresh lemon juice
- 1 teaspoon honey or 1 teaspoon maple syrup

Toasted Pecans
- 1⁄4 cup pecans
- 1 egg white
- 1 teaspoon brown sugar
- lettuce cup (for serving)
directions
- Preheat oven to 375° and lightly grease a cookie sheet.
- Whip egg white until stiff then fold in pecans and brown sugar stirring to coat. Then place pecans on a sheet leaving any extra egg white behind.
- Bake for about 20 minutes until lightly toasted, stirring pecans a few times.
- Remove from baking sheet and let cool.
- Combine all of salad ingredients on one bowl.
- Combine dressing ingredients in another bowl.
- Mix together dressing and chicken mixture adding more yogurt if needed if it seems too dry, then spoon into lettuce cups and top with toasted pecans.

OMG could it be! A LOW FAT Waldorf Salad for ME! Make chicken pickliscious with chicken thighs, TRUE! http://www.recipezaar.com/211489 Dill pickle juice added to flavour too! used low fat vanilla yogurt too! Love the taste and had on hand too! Used no sugar maple syrup as was easier in fridge to reach, yes! Did I LOVE this recipe? Don't think you'll have to GUESS! Place salad in fridge for about an hour too, As like my salads cold especially on a day when we're now having a heat wave, TRUE! THANKS!

I just loved this salad with it's truly unusual but unique dressing. Such a nice change from my usual chicken salad. My one lament here pertained to the pecans and egg whites which were a bit of a mess and ended up as a messy spatter on the baking sheet. I think this would have worked better to do a simple scramble of the white and lightly rolling the nuts in before tossing with the sugar. As it was there was too much merengue on the nuts which pooled and burned. Thanks!

I'm just a girl whos passion is for cooking, well some people would call it an obbsession rather.... I am a college student at RIT going for food management and prep, my favortie things! Most of my orignal recipes are made from left overs since I cook for one or two most days so there are always left overs in my house.
