  • Please peas and bacon in a large Dutch oven, and enough water to cover. Bring to boil and boil for 2 minutes. Remove from heat and soak, covered, for 1 hour.
  • In a skillet, heat butter over medium high heat, add onion, cook until tender. Add garlic, then thyme and salt.
  • Add onion mixture to undrained peas and return dutch oven to heat. Cook, covered, over medium heat until peas are tender (about 30 minutes), stirring occasionally.
