- 1 lb black-eyed peas, rinsed and sorted
- 1⁄2 lb bacon, cooked and crumbled
- 1 tablespoon butter
- 1 large onion
- 1 garlic clove, minced
- 1⁄2 teaspoon dried thyme
- 1⁄4 teaspoon salt
directions
- Please peas and bacon in a large Dutch oven, and enough water to cover. Bring to boil and boil for 2 minutes. Remove from heat and soak, covered, for 1 hour.
- In a skillet, heat butter over medium high heat, add onion, cook until tender. Add garlic, then thyme and salt.
- Add onion mixture to undrained peas and return dutch oven to heat. Cook, covered, over medium heat until peas are tender (about 30 minutes), stirring occasionally.
