  1. Preheat oven to 200 degrees celcius.
  2. Grease a 12 hole muffin pan.
  3. Sift flour, baking powder and cinnamon into a bowl, then stir in brown sugar.
  4. Melt butter and lightly beat egg.
  5. Combine butter, egg and milk.
  6. Peel, core and grate apples and add straight into the wet mixture.
  7. Make a well in the centre of dry mixture, pour in wet mixture and fold in very gently until combined (do not overwork batter).
  8. Pour into muffin pan until each hole is approx 3/4 full.
  9. Bake for 15 mins, or until golden on top.
  10. Rest in the pan for a couple of minutes then turn onto a wire rack to cool.
  11. Enjoy!
