- 2 (5 1/4 ounce) packages au gratin potatoes
- 1 medium onion, peeled and sliced thin
- 1 3⁄4 cups milk
- 4 cups boiling water
- 1 lb kielbasa
- 1 (10 ounce) package frozen peas
directions
- Preheat oven to 400°.
- Combine potatoes, sauce mix (from package) and onion in a 3-quart baking dish. Stir in milk and water. Bake uncovered 15 minutes.
- Make cuts 1-inch apart and about 1/2-inch deep into kielbasa with a sharp knife.
- Stir peas into potato mixture; place kielbasa on top.
- Bake 30 minutes or until potatoes are tender and kielbasa is lightly browned.
- Place kielbasa on a small platter and cut into serving size pieces.
- Serve potatoes from baking dish. .

Well, this was pretty good considering I really tried to mess it up!! Somehow I read that the 2nd half of cooking was to be covered--don't do that!!!!! I managed to salvage it and we enjoyed this simple weeknight dinner. Don't expect gourmet, but if you are looking for a quick, easy dinner, this is the ticket. We especially liked the onions mixed in, but I might add less peas next time only because they aren't my favorite vegetable. Thanks Elaineann and congrats on your week 3 win of the 2010 Football Pool!
