  • In a large pan sprayed with cooking spray, saute onion, bell peppers, garlic and celery.
  • Add soups, tomatoes, chiles, spices and chicken broth.
  • Line bottom of 9x13 pan with tortilla strips.
  • Spread half of chicken over tortillas and top with sauce, then half of cheese.
  • Cover with another layer of tortillas, chicken, sauce and cheese.
  • Bake at 350 degrees for 30 minutes or until bubbly.

  2. This recipe was great! It was easy and my 5 year old had a great time helping me tear up the tortillas. I used a HOT Rotel and it was really really spicy... but we love spicy food. My husband LOVED the casserole and wants me to make it for a work pot luck next week. I only used 1 tbs of chili powder and still thought it was too much. Next time I will use less. Otherwise, great recipe!! Thanks for sharing!
     
  3. I really enjoyed this recipe and I do not normally make casseroles. I omitted the celery. I also added the cumin like someone suggested. My husband decided to add more kick to it and added ground cayenne red pepper along with the chili powder. It was really good! I used the corn tortillas this time and they were really good but my husband wants to try it with the flour tortillas so next time I will use the flour ones. Thanks for a great, new recipe for my rotation!
     
  4. I've always wanted to try a King Ranch Chicken recipe, just because it seems like I hear it mentioned so often. I came across this one on accident, but I loved that it had such a short cook-time. I did make a few changes, as always. :) I used my peppers in another recipe and forgot to buy more, so I subbed frozen corn in their place. I will most definitely stick to that substitution. Dh isn't crazy about peppers anyway, and I just loved the sweetness and crunch of the corn with the spiciness of the dish. I also used garlic powder instead of minced garlic. Two tablespoons of chili powder is just too much. I knew that when I read it, and I didn't go with my gut. I'll probably cut it in half next time. It wasn't overpowering, but it was just too spicy for my tastes. I'm glad the kids didn't eat any for that reason. I had no clue what size tortillas to use, so I used the smaller ones. I put eight on each layer instead of six. It gave more of a separation between the layers, so I'll keep that in the future also. Overall, this was actually really good. I love that I can cram the veggies in there, and it makes for a perfect easy one-dish meal!
     
  5. Great!! I used a rotisserie chicken from Costco (cheap & very good). The only substitution was the chili powder. I used Lawry's taco seasoning. My father-in-law cannot eat spicy foods. It was fantastic. I don't know about freezing -- no leftovers! I will be making this frequently and forwarded the recipe to many friends already. This is easy + delicious!!!

  2. This was ok. I had really high hopes after all the reviews, but it was slightly bland- It definitely needed more salt. Also-I think next time, I would switch out the celery for corn, and maybe the cream of celery for cream of corn, or double cream of chicken.
     
  3. I loved this (and so did my fiance). My sister made it once and had me try it. I decided to make it last night, but I had to make some changes since I didn't have all the ingredients listed. Instead of using cheddar cheese, I used velveeta cheese (made it extra creamy!) Also, the tortillas I had in the refrigerator had expired so I didn't use any. I made rice to eat with it and then decided to actually mix the rice with it on my plate. It was good both ways!
     
  4. We enjoy a lot of kick & this recipe delivered it. I admit to not using low fat anything since I was serving it to friends who like full bodied flavors ;-) I used all the chili powder plus added 1 tsp. cumin & a healthy dash of red pepper flakes. I also subbed Cream of Chili Poblano soup for the celery soup & threw in can of drained, chopped chilis. Even though this recipe yields a large casserole, 5 adults polished it off with ease. This goes in my Keeper file. Thanks for posting!
     
  5. This has GOT to be my favorite meal in the whole world!!!! I use flour tortillas instead of corn which makes it not as puffy but still delicious!!!!
