Sauce
- 6 tablespoons flour
- 6 tablespoons bacon drippings
- 4 beef bouillon cubes
- 1⁄2 teaspoon salt
- 1 teaspoon garlic powder
- 1 - 1 1⁄2 teaspoon cumin
- 3 tablespoons red chili powder
- 4 cups boiling water
- 1 (8 ounce) can tomato sauce

Enchilada Filling
- 10 flour tortillas
- 1 1⁄2 lbs cheese
- 1 bunch green onion
- 1⁄2 lb ground meat
directions
- Pre-heat oven to 350*.
- Brown flour in bacon drippings until almost burned; remove from heat.
- Add next 5 ingredients; mix well return to heat.
- slowly add water stirring to a smooth red sauce, then add tomato sauce; simmer 15 minutes.
- prepare enchiladas as usual.

I am a stay at home mom to a very active teenager, and toddler. DH and I love to cook together in our way. I find the recipes, then I watch him cook them LOL

<br>My family picks on me constantly as I have a thing with raw meat, it really skeeves me out so I can not touch it, which makes cooking on my own a challenge.
<br>
<br>DH is in the Air Force and sadly will be leaving sometime the beginning of next year to go play in the sand for a year, so I am currently on the lookout for dishes I can cook on my own or with my teen easily and with minimal touching of raw meat.
