Ingredients Nutrition


  1. Beat the two eggs in a large mixing bowl.
  2. Zest one lime into the egg with a fine rasp type grater.
  3. Grate 1 and 1/2 cups of Parmigiano Reggiano with that same rasp type grater and add to egg mixture.
  4. Use a a truffle slicer or hand mandolin slicer to cut the Fresno chili into thin rings.
  5. Use a sharp knife to cut each ring of chili into thin strips and add them to the egg mixture.
  6. Fold the egg mixture to blend added ingredients and then fold in the bag of of Simply Potatoes Shredded Hash Browns.
  7. Form flat discs/ pancake like 1/2 cup portions with your hands.
  8. Pan fry each fritter in canola oil for about 8 minutes on each side in a non-stick saute pan on a medium to medium high flame.
  9. When they are golden brown-- remove to a paper towel to drain.
  10. Serve at least two warm fritters per person.
  11. You can squeeze some fresh lime juice over them from you left over above or slice thin wedges of fresh lime and add them as garnish.
