- 8 slices stale toasted bread
- 2 kiwi fruits, finely sliced
- unsalted butter, softened
- 1 cup milk
- 1 egg
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon ground cinnamon
- 1 teaspoon vegetable oil
- white sugar
- Greek yogurt, to serve

Method:
- Preheat oven to 170°C.
- Butter bread on one side and make sandwiches with kiwifruit.
- Whisk up milk, egg, vanilla and cinnamon.
- Heat oil and a knob of butter in a heavy-based frypan.
- Dunk sandwiches in milk on both sides, to coat well, and fry until brown on both sides. T.
- hen place in oven and cook about 3 minutes Turn over, sprinkle with a little sugar and cook for another 3 minutes.
- Cut sandwiches in half and serve with a dollop of yoghurt on the side.
