  • Preheat oven to 350ºF grease 12 count muffin pan.
  • Blend the eggs, sugar and oil. Then add kiwi, vanilla and lemon juice.
  • In a seperate bowl combine flour, salt, baking powder and baking soda. Mix well, then fold into the wet ingredients.
  • Fill muffins cup and bake for 25-30 minutes.

  1. This is a great recipe for kiwi muffins! The taste is fruity and has a slight hint of vanilla to it. Very nice! The texture is a bit denser than in other muffins, but that is to be expected in a fruit puree muffin. I made half the recipe and ended up with 7 nicely sized muffins, which rose beautifully. Due to the other reviews I only used a pinch of salt and only used the baking powder and no baking soda. THANKS SO MUCH for sharing your recipe with us, Coffee Mom!
     
  2. I adjusted this recipe, keeping in mind that other reviewers said that it was too salty and not sweet enough. I added 1/2 cup brown sugar, reduced the salt to 1/2 teaspoon, and replaced half the flour with whole wheat pastry flour (this change was based on personal preference). I also baked them for only 20 minutes, instead of 25-30. The result is pretty good, and probably worthy of an additional star. Just sweet enough, not at all salty, and the recipe works well with the whole wheat.
     
  3. I used 2 cups of flour, 1/2 tsp salt, 5 medium kiwis; baked for 15 mins. Makes a very nice muffin with an unusual but pleasant crunch from the kiwi seeds. Could've probably made more than 12 out of the batter. Didn't taste much of kiwi though.
     
  4. These muffins are supremely delicious! Very simple tasting, and just sweet enough (with adjustments suggested by others). The taste like a good, old fashioned muffin made by Grandma's sweetest home ingredients. :) Like another reviewer said, these muffins rise absolutely beautifully. Would be great to make when you have guests over for lunch!<br/>My changes to th recipe: 1/2 tsp salt, 1/2 c. brown sugar (on top of the 1/2 c. white), 20 min max bake time (even with big muffins!), and 3/4 tsp. vanilla. I also omitted the lemon juice, but that was simply due to the fact that I did not have any.<br/>Also, the Kiwi flavour was not as strong as I was expecting, so I might try adding another kiwi next time.
     
  5. These muffins looked fabulous...they rise up and look beautiful...but I wasn't as impressed with the taste. They weren't sweet enough and were a little too salty in my opinion. (My kids don't seem to mind however...they keep asking for more!) I'm going to try experimenting with this recipe a little...more sugar and less salt and I think they will be perfect. Oh...I loved the texture...it reminds me of banana bread or banana muffins. Thanks for sharing the recipe!

I'm a full-time student at a University of Wisconsin campus, with a double major in Sociology and History. I have three adorable children, ages 9 yrs, 5 yrs, and our 2 yr old son. My nine yr old is in third grade. My 5 yr old is is in kindergarten. My littlest one is pleasantly plump. ;) We also have 2 cats. My daughter recently joined recipezaar under the name Miss Bean I also really like sewing. I make @ 1/3 of my daughters clothes. Reading is also a BIG staple in my life. One of my favorite ways to find a book is to walk into the library, pick a shelf and simply grab a book at random. I've read so many great books I probably wouldn't have found out any other way. I also like to camp and fish with my DH. He eats, sleeps and breathes fishing. He would like to one day start his own company, he hand ties and sells fishing lures locally.
