  1. Preheat oven to 180C.
  2. Saute the shallot over a low heat in the olive oil.
  3. Add the pine nuts and cook until they get a little colour.
  4. Add parsley and remove from heat.
  5. Combine the mince with the paprika and cumin.
  6. Season with salt and pepper.
  7. You will need your hands to do this.
  8. Take a small tbs of mince.
  9. Flatten it in your hands.
  10. Place a tsp of the pine nuts in the centre of the mince and curl your hands around it into form a ball.
  11. Make sure the nuts are covered.
  12. Bake in an baking dish, on top of a rack for 30 minutes.
