Kohlrabi Apple Edamame Slaw

"We get local vegetables delivered weekly and this week there was a bunch of kohlrabi. This is what I came up with to use it up. I hand grate to save energy and get some exercise (ha) but you can use a food processor if you like. Cook time is chill time."

  • Grate apple and veggies and sprinkle with lemon juice and ground black pepper.
  • Mix together first 5 ingredients of dressing.
  • Blend in oil.
  • Pour over veggie mixture.
  • Refrigerate for at least 30 minutes.

  1. I had harvested some kohlrabi from my garden, and since temperatures where in the triple digits, I wanted to make a salad. When I found this recipe I couldn't believe that I had all the ingredients needed. It was very tasty, slightly sweet from the apple and just a wonderful summer side dish. After making the dressing, it seemed a little to strong in mustard taste, so I added about 1 Tbls of mayonnaise to the dressing and a little more sugar to taste.Oh yeah, and a little garlic from the garden in the dressing.
     
  2. I had received kohlrabi from a local farm co-op plan and decided to try this recipe. I was making the dressing when I realized that you'd forgotten to include how much oil to use. I guessed and used about 1/4 cup plus a dollop of mayo. Overall this was quite nice, although next time I'm going to omit the onion, as it almost overpowered the other flavors.
