Kohlrabi Apple Edamame Slaw

ingredients
- 3 kohlrabi
- 2 carrots
- 1 apple, use your favorite, I love a Braeburn
- 1⁄2 lemon, juice of
- 4 radishes, more if you like
- 1 cup shelled edamame
- 1 small onion, chopped

for dressing
- 2 tablespoons Dijon mustard
- 1⁄2 lemon, juice of
- 1⁄4 cup white wine vinegar
- 1 teaspoon sugar
- 1 shallot, minced about 1 T
directions
- Grate apple and veggies and sprinkle with lemon juice and ground black pepper.
- Mix together first 5 ingredients of dressing.
- Blend in oil.
- Pour over veggie mixture.
- Refrigerate for at least 30 minutes.

I had harvested some kohlrabi from my garden, and since temperatures where in the triple digits, I wanted to make a salad. When I found this recipe I couldn't believe that I had all the ingredients needed. It was very tasty, slightly sweet from the apple and just a wonderful summer side dish. After making the dressing, it seemed a little to strong in mustard taste, so I added about 1 Tbls of mayonnaise to the dressing and a little more sugar to taste.Oh yeah, and a little garlic from the garden in the dressing.

I had received kohlrabi from a local farm co-op plan and decided to try this recipe. I was making the dressing when I realized that you'd forgotten to include how much oil to use. I guessed and used about 1/4 cup plus a dollop of mayo. Overall this was quite nice, although next time I'm going to omit the onion, as it almost overpowered the other flavors.
