  • Grease loaf pan, double recipe for Bundt.
  • Cream shortening, sugar, and eggs.
  • Add banana and dry ingredients.
  • Pour 1/3 mixture into pan, sprinkle filling between layers of batter.
  • Bake at 350 for 35 minutes.

  1. I always like quick breads with swirls in the middle, and I love cinnamon, so this was right up my alley. I probably could've cut down a bit on the cinnamon in the swirl layer since it was a bit strong, but still good. I ended up having to double the recipe because I was thinking of a stick of butter when I added the stick of shortening to the bowl (1/2 cup vs. 1 cup). No big deal, I just doubled up on all the other ingredients and made two loaves instead of one. The only problem I had was that my breads took quite a bit longer than 35 minutes to cook (maybe 50 minutes total) to not be liquid in the middle, so the edges got pretty dark. Once I got past the crunchy edges, the bread was soft and moist. Thanks for posting! Made for PAC Spring 2013
