Kourougougatses - Cheese Pastries

  • Place dry ingredients into a food processor. Mix the wet ingredients and with the motor running slowly add to the flour. Mix until just incorporated. Cover and place in fridge for about 30mins.
  • Preheat oven to 180°C.
  • Roll out to about 3mm thick. and cut out rounds using a 12cm cookie cutter.
  • Beat the eggs for the filling and reserve about 1tbsp. Mix the remaining egg with the filling ingredients . Place about 1 tbsp of filling in each pastry round and fold in 1/2 and press down with a fork for decorative finish.
  • Place pastries on baking sheets and brush the reserved egg and bake for about 30 minutes.
