Kumara Salad

ingredients

  • 700 g kumara (sweet potato cut into 3 cm pieces)
  • 1 12 tablespoons vegetable oil (or olive oil)
  • 12 cup parsley (flat leaf coarsely chopped)
  • 2 tablespoons chives (chopped)
  • 1 tablespoon lemon juice

directions

  • Preheat oven to 220C (200C fan forced).
  • Line a baking tray with baking paper and place kumara on prepared tray and drizzle with half the oil and bake for 20 minutes or until tender.
  • Combine kumara with remaining ingredients in a medium bowl.

  1. I liked this a lot, Mr Grumpy was not as pleased (he was hoping for fries). I like even a plain cooked sweet potato with just a little butter or sour cream, so these were up my alley. I might add some cayenne or something to spice it up for Mr Grumpy next time. It did take a little longer to cook, but perhaps I cut mine a bit large.

  5. I loved these sweet potatoes! Such a simple recipe with a fresh taste, brings out the natural flavor of the potatoes. I left out the chives as I don't care for them. I didn't add any more oil after I roasted the potatoes and didn't miss it. Thanks for sharing the recipe!

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
