Kumquat Cookies

"I had a lot of kumquats to use up so I thought how about kumquat cookies? I love chocolate and orange together and kumquats are even better because their rind bakes up like chewy candy! I hope you like them!"

  • Preheat oven to 375 degrees F.
  • Cream butter and sugar together in a large bowl.
  • Add eggs and vanilla and mix well.
  • In another bowl, mix together flour, baking soda, and salt.
  • Add flour mix, little by little, to butter mix until all is blended together.
  • Stir in the oats and the kumquats.
  • Stir in the chocolate chips.
  • Drop by large teaspoon onto an ungreased cookie sheet.
  • Bake for 10-12 minutes or until golden brown.

  1. OMG! Delish!! I moved into a house with a Kumquat tree and I'm a cookie lover so this was perfect and tastes so yummy. I like that they are not super sweet. They are light and fluffy. I could eat them all. I used 62% semi sweet chocolate and chunked it myself, and being my first try, I didn't use the full amount of Kumquats. I plan on making them again soon.

  2. This is my second year making these delicious cookies. My favorite way so far is to dehydrate the kumquats for 8 hours the previous day. A bit more chew and definitely tart! I then added vegan chocolate chunks. Such an incredible flavor combo. The dehydrated kumquats are easy to keep in a dark cupboard for 3+ months. Much needed this year, my tree yielded 60 lbs this recent harvest.
     
  3. This only gets two stars because the idea of kumquat cookies is great. You can tell when you mix these up that they have too much flour, not enough shortening, leavening or sugar. I don't care if a cookie is really sweet, but it needs to taste like a cookie instead of a cross between a powder biscuit and a muffin, and it doesn't have enough shortening for either of those either. Take your favorite chocolate chip or oatmeal cookie recipe and add kumquats.
     
  4. My 10 yr old picked out a bag of kumquats the other day. We have never tried them so were surprised that by themselves they are a little bitter. I went in search of a recipe and found this. I was skeptical at first but read the reviews and it sounded like a good one to try. OH MY!! These are DELISH!! The whole family devoured them (except the fussy 8 year old). I am SO glad I found this recipe. I used 60% cacao ghirardelli chips. The hard part was dicing the little fruits. We will be making these again soon.
     
  5. Yum. I brought a bunch of these back to MI from FL and made a batch. I sent cookies back to FL and my brother loved them! I loved them and so did my friends here in MI. They could have been a bit sweeter for my liking; it is a unique cookie with a unique taste.
