Lachesis' Seitan O'greatness

"I have been using this recipe for a while now. It has been spreading through the vegan community like a wildfire. It is everywhere, but surprisingly I couldn't find it on this website. So, here it is. This stuff is great! I have been making seitan for years and this is the best recipe I have ever come across...hands down! I copied this recipe verbatim from SparkRecipies.com, which claims that it is originally from PostPunkKitchen.com."

  • Makes one large log that can be sliced and used as needed, approximately 8 servings.
  • Preheat oven to 325°F.
  • In a large mixing bowl mix dry ingredients. Mix the rest of the ingredients (liquid ingredients) in a smaller mixing bowl. Whisk well until mixed.
  • Add the liquid ingredients to the dry ingredients. Mix well, then knead for a minute or two. it doesn't need long.
  • Form into a log (6-8" long), wrap tightly in foil, twisting ends. Bake for 90 minutes. When done baking, unwrap and leave out to cool all the way. Then wrap it foil or plastic and refrigerate. Slice to use as desired.

Tweaks

  1. I believe this recipe is missing 3/4 cup of water. Other dupes I've seen include some water. I tried the recipe as written and not all the dry ingredients could be incorporated.
