  1. PRESOAK: 24 hours before baking, soak oats in buttermilk. Drain in fine meshed sieve or cheesecloth while preparing the batter.
  2. QUICK SOAKING METHOD:
  3. Soak oats in boiling water while preparing the batter. Do not drain.
  4. Heat oven to 350°F Grease 2 deep dish pie plates.
  5. Cream sugar, eggs, oil, vanilla.
  6. Sift together dry ingredients.
  7. Mix dry ingredients into wet.
  8. Stir in oats and optional ingredients.
  9. Pour batter into greased pans.
  10. Top with brown sugar.
  11. Bake at 350°F 20-25 minutes.
