  1. Combine lemon juice, zest, and mint in small bowl.
  2. Heat 2 tablespoon olive oil over medium heat. Warm lamb, roughly 1 minute each side. Remove from heat.
  3. Saute garlic and pine nuts, roughly 2 minutes.
  4. Combine lamb, pine nuts & garlic, spinach, onion, and olives.
  5. Whisk 4 tbsp olive oil into dressing mixture, toss with salad.
