  • In a large pot, heat olive oil over medium high till hot. Do not let it smoke. Saute until onion softens and starts to turn golden brown.
  • Meanwhile, in a small dish, mix together turmeric, pepper, salt, and garlic powder.
  • Add the lamb on top of the onions & sprinkle the seasoning mix evenly on top.
  • Brown meat on both sides, stirring to mix onions and seasoning.
  • Add vegetable stock and bring to a boil.
  • Simmer over low heat for 2 hours. You can skim off fat every so often as it boils.
  • Add tomato paste, parsley & cilantro. Stir.
  • Simmer another 20-30 minutes.
  • Serve over rice.
