- 6 lasagna noodles, cooked
- 8 ounces part-skim mozzarella cheese, shredded
- 8 ounces skim milk ricotta cheese
- 1⁄4 cup grated parmesan cheese
- 1 egg
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
- 1 pinch basil, to taste
- 3 cups tomato and basil pasta sauce
directions
- Preheat oven to 375 degrees
- Spray a 8x8 baking pan with cooking spray.
- Mix ricotta cheese, parmasan cheese, egg and seasonings if you are using them.
- Spread the cheese mixture on one side of each noodle.
- Spread a small amount of sauce on the cheese mixture.
- Sprinkle with the mozzarella cheese.
- Roll up the lasagna noodles.
- Put a small amount of tomato sauce into the bottom of the baking pan.
- Lay lasagna rolls into the pan.
- Cover with the remaining sauce.
- Bake for 30 minutes.
- Remove from oven and let sit for 10 minutes before serving.

This is a nice base recipe, I like more herbs and spices. For the cheese step (in an effort to save steps), I mixed the mozzarella in with the ricotta, eggs and paremesan. I added some garlic powder & oregano to the cheese mixture as well. I did not put sauce on the rolls prior to rolling them up and instead only placed it on the rolls after they were all in the pan. These could be frozen nicely by placing on a baking sheet, freezing and then placing in a large ziploc bag, remove & bake (covering with sauce & cheese first) for 40 minutes on 350. I also have made these with meatballs alongside in the dish for my meat loving family. Thanks for sharing!
