Directions

  1. Heat milk in saucepan until almost boiling, then remove from heat and set aside.
  2. Melt chocolate and butter in top of a double boiler, remove from heat.
  3. In a separate bowl, beat egg yolks until pale yellow.
  4. In a separate container, sift the dry ingredients together, then gradually stir into chocolate mixture, returning the pan to the double boiler.
  5. Add milk slowly and stir over double boiler, until mixture is fully thickened (15-20 minutes).
  6. Temper the eggs by slowly transferring 1/2 cup chocolate mixture into the egg yolks while whisking the yolks constantly, then slowly add the egg mixture back into the chocolate mixture in the same way.
  7. Cook over boiler, stirring constantly, for 5 minutes, ensuring mixture has thickened adequately. Remove from heat.
  8. After allowing the mixture to cool slightly, whisk in vanilla and then pour into baked pie shell. Chill with plastic wrap placed directly on the surface of the pie.
  9. Top with sweetened whipped cream.
