Layered Lettuce Salad

"This recipe came from an old Pine to Prairie Cookbook that the recipes were donated to. The telephone Pioneers of America made the book. My mother gave me three of these cookbooks and our family has used a lot of the recipes. This book has recipes from people who live all over the state of Minnesota. This is Yummy and great for a crowd, picnic, or holiday get togethers!"

  • Tear the cleaned crisp lettuce into small bite sized pieces and place in the bottom of 9x12 inch cake pan.
  • Layer the rest of the ingredients in the order given, do not cook peas.
  • Add the sugar to the mayonnaise and spread over the top as you would frosting.
  • Top with grated cheese.
  • Cover and refrigerate for 8 to 10 hours.
  • Bacon bits can be used for bacon.

  1. What a great make-ahead salad for a group!!! I followed the recipe exactly as stated. Made it a couple of hours ahead of time and it kept very well in the refrigerator. VERY TASTY and I recommend everyone give this a try. Thanks again Beaner for sharing this dish. :-)
     
  2. I have always loved this salad! Grew up on it as my mom's 'company' salad. I cut it in half, add a Tbsp of milk to the dressing, and make it in a square pan. Sometimes use spinach instead of iceberg lettuce.
     
  3. I made some modifications: 1 1/2 c mayo. 1/2 c buttermilk, and 2 tbs of cider vinegar for the dressing. I also used red and orange peppers and purple onion to add color instead of the all green as stated in the recipe. Finally, I sprinkled shredded parm over the finished salad.
     
  4. Have made a version of this recipe for many years. I used lowfat mayo, no sugar, and fat free cheese. Also chopped the eggs instead of slicing. A hit at our Memorial Day cook-out. Thanks

I have lived in Vancouver since 1987. I am a transplant from Minnesota. We have 3 grown sons, a wonderful daughter in law, 2 beautiful granddaughters,1 grandson 2 dogs (1 Border Collie named Molly and 1 Australian Shepherd/Border Collie mix named Gulliver, that we rescued) . I am for now working in property management and still trying to decide what I want to be when I grow up. My job is interesting, but quite demanding! My DH wants me to quit, I would love to stay home and be his goddess. I love to be at the beach flying kites, sailing with our friends, billiards,cooking, grilling and entertaining friends and family. We downhill ski in the winter and enjoy our family and our animals . If I had a month off I would love to spend it with our family together at warm tropical destination. Just enjoy our grown children and our grandchildren. Then when that trip came to an end, I would love for my DH & I to spent some time somewhere warm and tropical all alone. I could become quite the traveler. We had some life changes last October, I lost my balance and fell. I had 2 spiral breaks in my leg, my tibia and my fibula and another small half moon break. I did have some surgery and have 3 plates and 16 screws in my leg until this coming spring in March, then I will have some hardware removed, hopefully. Had to give up some sports! But heck it could be a lot worse. My DH just started a new job! That's good news!
