Lazy Day Brunch Casserole (Crustless Quiche)

"This is a very simple, but delicious brunch casserole - almost like a crustless quiche. We had this for our Lazy Day New Years brunch (our guests come in pajamas and stay that way all day - hence the name). It's very colourful and quick to throw together, especially if the cheese is grated and broccoli is chopped the day before. Don't chop the tomatoes ahead of time though as they tend to get soggy and lose flavour if refrigerated."

  • Preheat oven to 350°F.
  • Mix milk, flour and eggs well.
  • Add the remaining ingredients and pour into 8 X 8 greased baking dish.
  • Bake for 40-45 minutes.
  • Let sit 10 minutes before serving.

  1. Hubby says a solid 4 of 5; why not 5? Well, its quiche, and he's 63 and from the generation that real men don't eat quiche, hAha. We didn't add tomatoes (served them sliced as a side) but we added diced ham and a couple of shakes of hot sauce and black pepper to give it more kick. Quick, easy Friday pm dinner with those side tomatoes I mentioned plus biscuits, It was quite good!
     
  2. YUM! Came out perfect! Put in some sautéed spinach and mushrooms with a little garlic, topped with Roma tomatoes...will make it again!
     
  3. I made this on 9/09/08 for the "Breakfast Anytime Challenge" in the Cooking Photo Forum, and as part of mine and SO's dinner. Since it was just my SO and myself, I cut the broccoli down to 1 1/2 cups, and only used 3/4ths of a large tomato.The rest of the ingredients remained the same.The directions were so easy to follow, that even a new bride could make this and impress her mother-in-law.The taste was pretty good, we both thought that it could have used something like garlic powder, and ground black pepper to give it a bit more flavor.   5. Great recipe to work with! I wanted to make something similar with a bunch of spinach and onion I needed to use up. I wasn't sure if my substitutions would work out, but it came out perfectly! I'd guess you could substitute the broccoli and tomato with a similar amount of just about any veggie. Besides using spinach instead of broccoli, I only used 1 cup of cheddar cheese. Seriously, delicious!

  2. We found this to be absolutely brilliant, with the individual flavour of each of the ingredients complemented by the savoury combination of cheeses that melted through. I subbed thinly sliced mushrooms for one cup of broccoli and gouda cheese for the monterey jack. Thanks for posting, Martha!
