Lazy Perogy Casserole

"A great recipe from the "Barnwell Cookbook." I make this often, and it can be made ahead, and then just put in the fridge until you are ready to cook it. I often make it the night before, and let it sit in the fridge. A real keeper, and Canadian Favourite!"

directions

  • Cook noodles as directed on package.
  • Line the bottom of a 9x13-inch pan with the noodles.
  • In medium sized bowl mix cottage cheese, egg and 1/2 tsp of onion salt together.
  • Spread of noodles.
  • cover with another layer of noodles.
  • Now mix cheddar cheese with potato, salt, 1/2 tsp of onion salt and pepper.
  • Spread this over noodles.
  • Cover with yet another layer of noodles.
  • Melt butter in frying pan and sauté onion slowly until clear and soft.
  • Pour over noodles and cover.
  • Bake 30 minutes in 350° oven.
  • Let stand 10 minutes before cutting.
  • Serve with sour cream and grated cheddar.
  • Yummy.

  1. This is so delicious. And how could it not be with all that butter! I strained the cottage chees to get rid of some of the liquid, and didn’t have onion salt on hand so used same proportion of garlic salt instead. Tasty!
     
  2. We all really enjoyed this even the fussy kids. I will say that you can not use the cheater noodles that you don't need to cook, and I think next time we will add bacon bits. Thanks this was yummy.
     
  3. I only used 9 lasagna noodles, used lowfat cheese, and only poured 1/2 cup of light butter on for the last step. My dh and kids (who ADORE Pierogies) didn't really like the cottage cheese, so I might try it again with ricotta. It was really good.
     
  4. I added some garlic and dill to the potatoes while they were boiling to give some more flavour, other than that I followed all the rules. Love It - will definatley make this again and again. Freezes good too!!!
     
  5. this was a really good dish. I didn't have any noodles on hand so I made my own which were really good and added to the flavor. Loved the taste and will make again. Will buy noodles next time.

I live in Northern Canada, and really love it here. I work full time, have two great kids; Robyn - aged 8 and Braeden - aged 5. I have a great Hubby who does most of the cooking during the week, as he is home much earlier than I. We love to entertain on the weekends, and often have large dinner parties. It's lots of fun, and we really like spending time with those we aren't able to see as often as we would like. The Hubby and I enjoy setting the menu, and then being up to our arm-pits in work!! Our guests always love coming to our house for good food, good friendship, and good wine. What else is there?.......
