- 1⁄2 lb fresh or frozen raw shrimp
- 1⁄2 cup chopped green onion (with tops)
- 1⁄4 cup all-purpose flour
- 1⁄4 cup water
- 1 egg
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1⁄4 teaspoon sugar
- 1⁄4 teaspoon sesame oil
- 1 dash white pepper
- vegetable oil
- 5 slices white bread
directions
- Peel shrimp. (If shrimp is frozen, do not thaw; peel under running cold water.) Make a shallow cut lengthwise down back of each shrimp; wash out sand vein. Cut shrimp lengthwise into halves; cut crosswise into halves.
- Mix shrimp, green onions, flour, water, egg, cornstarch, salt, sugar. sesame oil and white pepper.
- Heat vegetable oil (1-1/2 inches) in wok to 350 degrees. Remove crusts from bread; cut each slice into 4 squares. Place 1 or 2 pieces of shrimp with sauce on each bread square.
- Fry 5 squares at a time until golden brown, turning frequently - about 2 minutes. Drain on paper towel.
- Do-ahead instructions: Prepare Shrimp Toast; cover and refrigerate no longer than 24 hours. Just before serving, heat uncovered in 400 degree oven until hot for 12 - 15 minutes. Drain on paper towel.

I have made this many times. At serving time I am always somewhat discouraged regarding "how greasy" they seem to be. Any suggestions to cut this down, even when at the old Leeann Chin Buffets that where ownded by Leann Chin I always noted the greasy taste? I loved the product but hated how greasy they were to eat. Wondering about an "air fryer?"

The batter was a little runny, usually it should be more paste-like so it would not drip off the bread. Next time, I will use 2 tablespoons of water instead of the 1/4 cup. My son likes his a little sweeter, so I increased the sugar to 2 teaspoons. The batter fried up real light and crispy, very much like that of a tempura, so I think, it can be fried on its own like fritters. Very delicious. Thank you for sharing.
