  1. Heat oil and butter in large pot.
  2. Add leeks, cover and cook on low heat for 10 minutes.
  3. Stir occasionally, add garlic, cook further 30 minutes or till soft.
  4. Add drained chickpeas and 3 cups stock.
  5. Bring to the boil, simmer 5 minutes.
  6. Process half the soup in a food processor until smooth.
  7. Return to pot with remaining chunky soup.
  8. Add last amount of stock and stir.
  9. Season to taste, garnish with chives.
  10. Serve with crusty bread.
