directions

  • blanche leeks in salted water-8 minutes.
  • pat dry and split lengthwise.
  • place leeks in buttered ovenproof dish.
  • roast in 375F oven for 30 minutes.
  • melt butter in saute pan.
  • saute garlic and shallots for 3 minutes.
  • add mushrooms and saute for 4 minutes.
  • add thyme and wine
  • simmer.
  • reduce by 1/2.
  • add cream and mustard.
  • simmer and reduce to 1/2.
  • pour sauce over leeks.
