Leeks with mustards and cheese

"Leeks with cheese is a traditional dish in the Netherlands, the two mustards add a nice tang to this dish. If you are not a big mustard fan, start with using 1/2 tablespoons of the mustard."

  • Preheat oven to 400 degrees F.
  • Place the leeks in a pan of cold salted water, bring to the boil and simmer for 3 minutes until just tender.
  • Drain and put under cold water immediately to refresh and stop the cooking process.
  • Place the butter, flour and milk in a saucepan and slowly bring up to the boil whisking all the time.
  • Once it is up to the boil, reduce the heat and let it just simmer for 2 minutes.
  • Add the grated cheddar and parmesan, then the mustards.
  • Season with salt and pepper and the nutmeg.
  • Put the leeks into a shallow serving dish and pour over the sauce.
  • Mix the breadcrumbs and the cheese together and sprinkle over the top of the leeks.
  • Bake in the oven for 20 minutes until the top is golden brown.

  1. I think Bergy said it all for me in her review. These were great leeks. I didn't use the cheddar cheese (when I discovered I didn't have any!) but I used a very sharp and quite fresh textured buffalo cheese. It's supposed to be a good melting cheese, and worked really well in this dish.
     
  2. I love to find good recipes for leeks - they are such an underated veggie. This is an excellent recipe the only thing I changed I cut back a bit on the cheese and used Danbo - a Danish Low Fat Cheese that is excellent for cooked very flavorful The blend of the mustards & cheeses complimented the leeks and the bit of crumb on top finishes the dish - I cut the recipe in half with no problen.   3. Prepared this as a make-ahead side for Thanksgiving. So different from the usual; everyone LOVED it!<br/>I TRIPLED the recipe for twelve medium/large leeks. Prepared everything the day before and put in a 9x13 ceramic baker - lasagne-depth, but there was way too much sauce (I saved 1.5-2 cups and figure I'll make braised endive or etc later in the week). In the fridge over night. Since the casserole started cool, I baked it at 350 for an hour - mostly because that was the temp needed for the cornbread. It also allowed us to leave the turkey "rest."
     
  4. Wow was that sauce good! But there was so much of it, and it was a bit soupy. Family LOVED the taste, and we spent most of dinner talking about other things we'd use the same sauce for: poached eggs, pasta with fish, braised endives. I'll try it again, I'm sure, and maybe figure out what I did (or didn't) do right.
     
  5. These leeks are terrific! I made the recipe exactly as written. Loved the cheese and mustard flavor. I've never prepared leeks like this before, but now I have a new favorite was of making leeks! Thanx for the recipe!

Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
