Leftover Casserole

"This is something I did one night when I had a bunch of good leftovers. You could switch out just about anything for anything of a similar type, which is why the recipe might look a little funny . . . *grins*"

ingredients

  • 1 23 cups hot water
  • 1 (6 ounce) package prepared stuffing (whatever flavor you have in the pantry)
  • 1 (10 3/4 ounce) can cream soup (whatever you have!)
  • 1 1 lb cooked pork (whatever you have in the fridge) or 1 lb cooked beans (whatever you have in the fridge)
  • 1 -3 cup mixed vegetables (again, whatever you have, already cooked preferably)
  • 34 cup milk
  • 1 12 cups cheese, shredded (whatever you have in the fridge)

directions

  • Add the hot water to the stuffing and set aside.
  • Mix everything else together in a casserole dish. Top with the stuffing.
  • Bake, uncovered, for 30 minutes at 350°F, or until casserole is bubbly and stuffing is a little crusty.

  1. This was surprisingly good, I am impressed. For the casserole I used pork roast slices, whole mushrooms, sliced sweet onion and canned green peas. I also used Cracker barrel old cheddar and cream of mushroom soup. Thanks so much for sharing. My dh was in heaven. Made for What's on the Menu? Tag Game.
     
  2. Oh my gosh, this is perfect. I had a bunch of small amounts of leftovers and this worked perfectly. I used some beef from our Sunday Gravy, cuban pork and ham chunks. For the veggies we had hominy, green beans and mushrooms. I used cream of mushroom, and pork stuffing mix. So good. Thanks for the great idea for leftovers.
     
  3. This is my new "go to" recipe for leftovers. I have changed it up and used spanish rice or seasoned italian risotto instead of the stuffing. I have made this with every type of meat and veggie, cream soup you can imagine. <br/><br/>As a budget stretcher we have one meal per week (usually Saturday) that is nothing but leftovers from the week. I used to do a "buffet" type thing and just heat up the individual leftovers or make soup but now we have this at least once a week with homemade bread/rolls and a nice garden salad. It makes leftovers not "feel" like leftovers. Thanks

  5. I have to say I hate leftovers, and trying to use them up. I found this recipe and now it's the only one I will use no matter what I have left over. <br/>I had pork leftover and just started going thru the fridge, found some lima's,frozen cubed potatoes, can of mixed veggies, cup of cheese, cream of celery soup. I had no dressing, so I put a can of biscuits on top...........used all my favorite spices and BAM I had dinner.

I'm a stay at home mom with two lovely children, a wonderful husband, and 2 hungry roommates. I'm an artist by avocation, and am working to being one by vocation as well. * grins * Just to let everyone know, after a half hour discussion about it, the boys (DH and Roommate) have settled on ratings meanings. I reserve the right to bump up or down a half star a recipe based on the actual recipe and how easy it was, etc. etc. I have to admit, it's been a couple of years since I updated this text and in the meantime, my picky picky DD has flowered into a girl who enjoys California rolls, will give almost everything a try, and in general much less picky than the average 7 year old in this area. DS, at 2 and a half, asks for salad for lunch and then demolishes it. He's a weirdo. :) We try to be very honest and very descriptive with our reviews. And I fully appreciate the same from people reviewing my recipes. Not every family will like every recipe, and sometimes what you didn't like about a recipe, another family will love! :) I also try to be as nice and polite as possible in my reviews. I don't believe there is any reason not to. The only thing that really upsets me enough to be mean is when a poorly written recipe forces me to have to clean my kitchen. ***** - "Scout is not allowed to make this very often because it is highly addictive and will be inhaled on sight!" Dump Cakes, Sweet Salsa Chicken and Wasabi Peanuts are in this category. **** - "This is wonderful and we want to see it again fairly often, a new family favorite." *** - "This is good. We woud eat it again without any changes, but it's not our favorite." ** - "We did not like this very much, but we would eat it again if served it. It would be good if some changes were made. This was really not to our taste." * - "We would eat this again only with a lot of condiments to mask the taste." no stars - Means that I want to say something, but don't wish to post stars. This does not mean it is worse than a one star recipe!! :) I will only post public recipes that I have in fact cooked, and that my family has enjoyed - at least 3 stars on the above scale.
