- 1 egg
- 236.59 ml mashed potatoes (left over)
- 78.78 ml flour
- 1 green onion (finely chopped)
- 2.46 ml baking powder
- 4.92 ml salt
- 1.23 ml black pepper
- 14.79-29.58 ml milk
- 29.58-44.37 ml shortening or 29.58-44.37 ml vegetable oil
directions
- Beat the egg.
- Mix the beaten egg with the mashed potatoes.
- Stir in the dry ingredients.
- Add the milk and mix well.
- The batter should be very thick.
- Melt the shortening or heat the oil in a skillet.
- Spoon batter into the skillet to form 3" to 3-1/2" inch wide pancakes, about 1/2" thick.
- Brown on one side, over medium heat. Turn and brown on the other side.
- Serve with ketchup.
- These are great cold and served the next day.

This might help, I don't use peppers, but I do use breadcrumb to make it hold together and instead of frying I bake in the oven at 350 , I spray the bottom of pan ,I but a small bit of butter ,I use can't believe it not butter on top. Bake for about 4 -5 until brown on bottom and flip on other side until brown . its a recipe that's been handed down
